A tasty nutritious dish from a beautiful country: Casado from Costa Rica. During my trip in Costa Rica I’ve eaten casado many times in almost all visited cities. And not without reason, because it is very tasty!
Many restaurants serve this traditional Costa Rican dish. Casado is often eaten for lunch, but often also for dinner. Casado also includes the delicious baked plantains. Unfortunately, it’s still quite difficult to find good ripe plantains in the Netherlands, so you can replace them with regular bananas if you cannot find them. But plantains are the best.
The leftovers of Casado are often baked the next morning with a bowl of fruit. But a fish, a piece of chicken and plantains can also go well. The leftovers from Casado go under the name Gallo Pinto, also a very tasty dish.
Costa Rican cuisine mainly consists of a lot of beans, rice and chicken, but fish is also often on the menu. The typical Costa Rican sauce is Salsa Lizano.
Casado Recipe
Ingredients (for 4 people)
- 8 chicken drumsticks (2 pp)
- 20 grams of butter
- Splash of oil
- 350 grams of rice
- 2 cloves of garlic
- 1 onion
- 1 can of black beans
- 3 potatoes
- 1 can of corn
- 2 tomatoes
- 1/2 cucumber
- 1 small carrot
- 2 ripe plantains
- coriander
Instructions
Sprinkle the drumsticks with salt. Heat the butter with the oil in a frying pan and fry the chicken on a high heat brown all around. Reduce the heat and fry the chicken for about 30 minutes with the lid on the pan. If necessary, add a little water or stock and turn the chicken regularly.
Meanwhile, cook the rice according to the package instructions. Finely chop the cloves of garlic and the onion. Fry the garlic and onion for a few minutes. Then pour in the beans. Also pour most of the sauce from the black beans, which is very tasty with this dish!
Peel the potatoes and cut into small cubes. Bring a pan of water to a boil and boil the potato pieces. Heat the corn in a pan. Drain both and combine in a bowl with salt and pepper.
Meanwhile cut the tomato into pieces, the cucumber into slices and grate the carrot. Cut the plantains into thick slices. Fry the plantains in a layer of oil in a pan.
Grab 4 large plates. Place a pile of rice in the center of each plate. Put a heap of salad of the tomato, cucumber and carrot on the right, next to it two chicken drumsticks, a large scoop of beans, the potato pieces and corn and finally the plantains. Add some coriander leaves to taste.
