Greek cuisine is really my thing! These Greek zucchini croquettes are one of the typical Greek mezze you have to try when visiting Greece. They’re also completely vegetarian. I saw these croquettes on several menus during my citytrip to Athens. It didn’t sound very appealing to me at firts. But when I saw them so often, I had to order them at least once. Wow, how surprisingly tasteful! Especially in combination with the delicious Greek tzatziki, this’s highly recommended.

I had to remember this recipe for home! It contains quite a few ingredients although most are seasonings. The many different fresh herbs make the Greek zucchini croquettes very tasty. However, this is not a difficult dish. Serve this tasty dish in combination with other Greek mezze such as Greek Fava with pita bread Greek tzatziki and fresh Greek salad.

Greek Zucchini Croquettes Recipe

Ingredients

  • 2 zucchini
  • 1 large onion
  • 2 eggs
  • 100 gr feta
  • 100 gr flour
  • 3 tbsp parsley
  • 2 tbsp fresh mint
  • 3 tbsp fresh dill
  • 3 tbsp chives
  • Salt and pepper
  • oil for frying

Instructions

Start by grating the zucchini and onion. Then wrap the grated vegetables in a clean dishcloth and squeeze out all the moisture. Then put the vegetables in a large mixing bowl.

Chop the mint, parsley, dill and chives. Next add the herbs to the zucchini-onion mixture in the mixing bowl. Then add the eggs, flour, feta cheese, salt and pepper and stir well.

Finally, make small discs of the mixture with your hands. Heat a layer of oil in the pan, but do not set the heat too high, otherwise the croquettes will bake too quickly. Bake the zucchini croquettes on each side until golden brown. Then drain them on some kitchen paper. Make sure that the croquettes are well cooked inside and no longer wet.

The zucchini croquettes are most delicious with homemade tzatziki, the delicious sauce made of cucumber, yogurt and lots of garlic.
